Steamed Pumpkin


600 gr Pumpkin
200 gr Black Eye Peas
1 tbs Coconut Oil
1 Cucumber
1 Red Onion
3 Garlic
2 Tumeric
3 Pimemto All Spice Berries
Sprig Of Thyme
Sprig Of Rosemary
4 Scallion
1/2 Scotch Bonnet Chilli Pepper
Sea Salt To Taste


Firstly Pre-cook the black eye peas for approximately 45 minutes at a medium heat until tender, leave in the pot until ready to use.

Heat the pot up on a medium to high heat and add the sliced onion, garlic, tumeric, scallion and pimemto {When it comes to the scotch bonnet for this meal it would be best to finely slice along the length then the side so you get the flavor without blowing your head off} add that too with the rosemary and thyme.
Slice the pumpkin into small chunks and add.
Do this the way which suits you however i like to use a grater, as you will have seen in the video i slice my cucumber straight in the pot to cover the pumpkin.
Lastly remove the black eye peas from the water pour over the cucumber add salt to taste cover.
Leave to simmer on medium low heat.
Cooking time there after will be approximately 30 minutes.
The entire cooking time is approximately 1 hour 15 mins.
One of the beauties of this dish is the cucumber provides the water to cook the pumpkin and all the the flavors are locked in.

Remove the skin and seed from the mango and slice into small chunks and pretty much the same with the Pineapple.
